An iconic Spanish ham, Jamon Iberico is produced from the Iberico pig, which is different from the pink pigs we see today. The meat contains veins of fat running through it as well as a thicker external layer of fat, allowing the meat to be cured for longer periods of time and lending the Jamon Iberico a complex and powerful flavour with a hint of sweetness.
